Arcana Recipes: Cocktails

Northern Herb Smash

Ingredients
· 1.5 oz Dillon's D7 gin
· 0.5 oz maple syrup (or birch syrup for
added complexity)
· 0.5 oz apple cider (non-alcoholic)
· 5-6 drops Arcana Aromatic Bitters
· Fresh wild herbs (sage or Labrador tea)
· Canadian sparkling water (optional, for a lighter finish)
· Apple slice (optional, for garnish)

Directions
· In a shaker, gently muddle the fresh wild herbs with the birch or maple syrup and the apple cider to release their flavours.
· Add gin and aromatic bitters, fill the shaker with ice and shake until well chilled.
· Strain over ice into a rocks glass, and top with a splash of Canadian sparkling water (if desired).
· Garnish with a sprig of fresh herbs or a small apple slice.

Walnut Maple Sour

Ingredients
· 2 oz Northern Harvest rye whiskey
· 0.5 oz maple syrup
· 1oz apple cider (non-alcoholic)
· 5 drops Arcana Maple Walnut Bitters
· 1 egg white (optional, for froth and texture)

Directions
· In a cocktail shaker, combine the whisky, maple syrup, apple cider, maple walnut bitters, and egg white.
· Shake without ice for a few seconds to create a froth.
· Add ice to the shaker and shake again until well chilled.
· Strain into a coupe or rocks glass.
· Garnish with a sprinkle of finely crushed walnut or a small slice of dried apple for a rustic Canadian touch.

Maple Nut Manhattan

Ingredients
· 2 oz Lot 40 rye whiskey
· 1 oz Dillon's Sweet Vermouth
· 2 drops Arcana Maple Walnut Bitters
· 1 small piece of maple-candied walnut or roasted walnut (for garnish)

Directions
· In a mixing glass, combine the whisky, sweet vermouth, and bitters.
· Add ice and stir until well chilled.
· Strain into a chilled coupe or rocks glass.
· Garnish with a maple-candied walnut or a roasted walnut for a nutty, sweet aroma.

Forest Canopy Sour

Ingredients
· 1.5 oz Dillon's 7 gin
· 1 tsp wildflower honey (or 10ml honey/water syrup)
· 0.75 oz verjus
· 4 drops Arcana Sumac Bitters
· 6 drops Arcana Forest Bitters
· 1 egg white (optional, for a frothy texture)

Directions
· In a shaker, combine the gin, honey, verjus, and bitters.
· If using egg white, add egg white and shake without ice.
· Add ice to the shaker and shake again until well chilled.
· Strain into a coupe and garnish with a spruce tip or cedar sprig, and a sprinkle of dried wildflowers.

Boreal Old Fashioned

Ingredients
· 1.5 oz CC 100% rye whiskey
· 0.25 oz maple syrup
· 3 drops Arcana Forest Bitters
· Orange peel for garnish

Directions
· In a mixing glass, combine the whisky, maple syrup, and forest bitters.
· Add ice and stir until well chilled.
· Strain into a rocks glass over a large ice cube.
· Express the orange peel over the drink to release the oils, then drop it into the glass as a garnish.

Wild North Crantini

Ingredients
· 2 oz Canadian vodka
· 0.5 oz maple syrup
· 1.0 oz cranberry juice
· 2-3 drops Arcana Sumac Bitters
· Small pinch of sea salt (optional, to enhance flavours)
· Sprig of spruce or fresh cranberries (optional, for garnish)

Directions
· In a mixing glass with ice, combine the vodka, maple syrup, cranberry juice, sumac bitters, and sea salt.
· Stir until well chilled, then strain into a chilled martini glass.
· Garnish with a sprig of spruce or a few fresh cranberries for a seasonal, forest-inspired touch.

Northern Spice

Directions

· 1.5 oz CC 100% rye whiskey

· Cedar sprig (optional, for garnish)

Directions
· In a cocktail shaker, combine the whiskey, maple syrup, apple cider, umami bitters, and egg white.

· 4 drops Arcana Sumac Bitters
· Canadian sparkling wine (sparkling Riesling) or sparkling water (for a bubbly finish)
· Edible wildflower or apple slice (optional, for garnish)

Directions
· In a shaker, combine the gin, wildflower honey syrup, apple cider, and bitters with ice.
· Gently shake, strain into a wine glass filled with ice.

Timberline Reverie

Ingredients
· 2 oz Northern Harvest rye
· 0.5 oz maple syrup
· 1 tsp wildflower honey (or 2 tsp honey/water syrup)
· 1.5 oz fresh pear juice
· 4 drops Arcana Oak Bitters
· 2 drops Arcana Black Walnut Bitters
· Fresh thyme sprig and dehydrated pear slice (optional, for garnish)

Directions
· In a mixing glass, combine the rye, maple syrup, honey and bitters.
· Add ice to the mixing glass and stir until well chilled.
· Strain into a rocks glass, garnish with a sprig of fresh thyme and a dehydrated pear slice.

Wild Fern Highball

Ingredients
· 4 oz cold Labrador tea
· 0.5 oz maple syrup
· 5 drops Arcana Aromatic Bitters
· 2 oz sparkling water
· Sweet fern sprig (optional, for garnish)

Directions
· Stir maple syrup and aromatic bitters into the cold Labrador tea.
· Pour over ice in a tall glass and top with sparkling water.
· Garnish with sweet fern.

Wildflower Cream Soda

Ingredients
· 3 oz wild rosehip tea
· 0.5 wildflower honey (or 0.5 tsp honey/water syrup)
· 5 drops Arcana Wildflower Bitters
· 2 oz sparkling water
· Fresh rose petals (optional, for garnish)

Directions
· In a mixing glass, combine rosehip tea, honey, and wildflower bitters.
· Pour over ice in a rocks glass and top with sparkling water.
· Garnish with rose petals.

Northern Spritz

Ingredients
· 0.5 oz maple syrup
· 0.5-0.75 oz fireweed tea (chilled)
· 8 drops Arcana Sumac Bitters
· 4 oz sparkling water
· Wild blueberries (optional, for garnish)

Directions
· Stir maple syrup and sumac bitters into chilled fireweed tea.
· Pour over ice into a wine glass and top with sparkling water.
· Garnish with wild blueberries on a cocktail pick.

Maple Umami

Ingredients
· 3 oz roasted dandelion root & spruce tip tea
· 0.5 oz dark maple syrup
· 5 drops Arcana Umami bitters
· Dried seaweed (optional, for garnish)

Directions
· Combine all ingredients and stir together over ice.
· Strain into a chilled glass and garnish with dried seaweed.

Charred Maple Spritz

Ingredients
· 3 oz roasted chicory root tea (240ml water with 3g roasted chicory root)
· 0.5 oz maple syrup
· 4 drops Arcana Oak Bitters
· 2 oz sparkling water
· Charred oak stick (optional, for garnish)

Directions
· In a mixing glass combine tea, syrup and oak bitters, then top with sparkling water.
· Pour over ice and garnish with the charred oak stick.

Maple Nut Cream Soda

Ingredients
· 0.5 oz maple syrup
· 5 drops Arcana Maple Walnut Bitters
· 3 oz sparkling water
· Toasted walnut (optional, for garnish)

Directions
· Combine all ingredients and gentle stir.
· Garnish with toasted walnut.

Windswept Pine

Ingredients
· 3 oz cold pine needle tea
· 0.5 oz maple syrup
· 4 drops Arcana Forest Bitters
· Fresh spruce tip (optional, for garnish)

Directions
· Combine all ingredients and stir together over ice.
· Garnish with fresh spruce tip.

Deep Woods Tonic

Ingredients
· 3 oz cedar & juniper tea (240ml water with 1g fresh cedar leaf and 0.5g dried juniper berries)
· 0.5 oz maple syrup
· 3 drops Arcana Forest Bitters
· Cedar leaf (optional, for garnish)

Directions
· Combine all ingredients and stir together over ice.
· Garnish with cedar leaf.
